Rachero Breakfast Tostadas, from the Sprouted Kitchen Cookbook

My boyfriend and I made these as a Sunday morning treat. They're so, so simple, and are a perfect breakfast option if you're like me and have serious salt/savory cravings first thing in the morning.


The recipe comes from one of my favorite cookbooks, the Sprouted Kitchen. It was written by Sara Forte, who writes Sprouted Kitchen blog - which is full of lovely, inventive ideas for using fresh produce. Essentially, this breakfast is a tortilla, a glorious black bean/bacon mash, green onions, avocado, cilantro, and egg - topped with a bit of salsa and sour cream, of course.

Takes about 15 minutes to prepare, but feels occasion-worthy and considered. It's delicious.
